
1 lb Fresh raw mushrooms; large
1 cup grated cheddar cheese
1/2 medium Onion; minced
1/2 cup Bread crumbs
3 tb Butter
3 tb Parsley
Salt and pepper
Wash and stem the mushrooms, put caps in a glass baking dish with “holes” facing up. Brush with melted butter. Chop stems into small pieces and combine with minced onion, bread crumbs, cheese, parsley, leftover butter, and salt and pepper. Stuff mixture into caps and bake until cheese melts. Serve as an appetizer or a side dish, especially good with steak and baked potatoes. My brother-in-law made these for us one time and they were a hit and we’ve made them ever since.
