
Ham with Mustard Glaze
Ham (fresh, not canned)
1/2 cup brown sugar
1/2 teaspoon dry mustard
1 tablespoon prepared mustard (like French’s)
2 tablespoons orange juice, lemon juice, or water
1/2 cup (more) brown sugar
Place ham, fat side up, in a shallow roasting pan. Do not cover or add water. Score ham with a sharp knife in a diamond pattern. Insert a meat thermometer in the thickest part of the ham and roast in a 325-degree oven for 1 hour. Prepare glaze; combine 1/2 cup of brown sugar, both mustards, and juice or water. Spoon glaze over ham. Pat remaining brown sugar overglaze. Bake 30 minutes more. Serve with roasted new potatoes (add to the ham’s roasting pan 1/2 before adding the glaze), whole green beans, and whole baby carrots. Serve strawberry shortcake for dessert. This is a great Easter dinner.
