TMI Tuesday: October 27, 2020: At Home

1. Favorite form of adult pajamas: Kimono, soft pant, romper or Winnie-the-pooh style? 

Closest to the Winnie-the-pooh style… only a little more “bear”…

2. What time do you wake-up in the morning?

Morning? What’s that? Today I woke up at 5pm.

3. Your favorite chore to do is _____ .

I’m assuming you mean household chores. Those I don’t do. Others do that for me (yes, I am terribly spoiled). So I’ll reframe that as “task”. My favorite task is being online… reading, writing, doing research.

4. Least favorite chore to do is _____ . Why?

Having to go to the bathroom. The human body was designed so poorly. Bathroom tasks are such a waste of time. The only thing that makes it even a tiny bit acceptable is my bidet. How did I ever live without it?

5. Tell us about a home-cooked meal that you cannot forget.

I don’t remember where I had this, I think it was in the cafeteria at work, of all places: creamy macaroni and cheese, homemade applesauce, glazed carrots and brownies. When I learned that I was pregnant with my son, which was the same day I received my daycare license, on October 2, 1980, I created “family day” and we had this menu every year on that day. We also looked at photo albums, home videos and played games.

This is my “world famous” recipe for mac and cheese:

Cindi’s Special Baked Macaroni and Cheese

2 cups of uncooked elbow macaroni
1/4 cup of butter
1 chopped onion
1/4 cup of flour
2 cups milk
8 to 10 ounces of grated Cheddar cheese
4 to 5 ounces of Velveeta cheese, cubed
salt and pepper to taste
garlic powder or garlic clove, chopped or minced (optional)

Fill a 2-quart saucepan with cold water and a little salt. Bring to a boil
and add macaroni, cook for about 10 minutes, or until tender. Drain and
rinse and put aside. Melt butter in another saucepan. Add chopped onion
(and optional chopped garlic) to melted butter and cook until
translucent and slightly browned. Blend in flour and cook over low heat,
stirring, until smooth and bubbly. Stir in milk and continue stirring
until the sauce becomes thick and creamy. Remove from heat. Stir in grated
cheese and cubed cheese and blend until melted. Rinse macaroni in hot
water and drain again. Pour macaroni into a casserole dish. Add cheese
sauce and mix. Sprinkle with paprika. Bake uncovered at 375 degrees for
20 to 30 minutes, until hot and bubbly and slightly browned on top.

Bonus: Is tired the new norm?

It certainly is for me. The only time I feel rested and energetic is when the doctor gives me Prednisone. I wish I could be on this all the time. But at this point, I’d be happy if they would give me something for the pain in my knees. Almost as bad as a pain in the ass.
